Abstract

This community service activity aimed to disseminate appropriate technology in the production of palm sugar to artisans in Kaliabu Village, Magelang. Although modern technologies such as spray drying and membrane technology were not directly implemented, the dissemination provided artisans with new insights into how to improve the quality and efficiency of their palm sugar production. The traditional methods currently used by the artisans tend to degrade product quality due to prolonged heating and high moisture content. Through this activity, artisans were introduced to the potential of modern technologies that could address these issues. Evaluation showed that the artisans responded positively to the information provided and expressed interest in further exploring the introduced technologies. This activity serves as an important initial step in strengthening the capacity of palm sugar artisans to face more competitive production challenges.
